Avocado Poblano Dressing

Roasted Corn, Steak and Cotija Cheese Salad

Yield: 4 servings


  • 3/4 cup Marie’s® Creamy Avocado Poblano Dressing
  • 2 cups grilled steak, diced 1/2-inch
  • 1-1/2 cups orzo pasta, cooked
  • 3/4 cup black beans, canned and cleaned
  • 1/2 cup pear tomatoes, diced 1/2-inch
  • 1/2 cup roasted corn
  • 1/4 cup red peppers, diced
  • 1/4 cup carrots, julienne
  • 4 cups romaine lettuce, shredded
  • 3/4 cup Cotija cheese, crumbled


  1. Mix all ingredients together except romaine lettuce and ¼ cup of the Cotija cheese; combine well.
  2. Place romaine lettuce onto a serving dish and top with mixed ingredients. Garnish with remaining Cotija cheese.
