Avocado Poblano Dressing

Roasted Corn, Steak and Cotija Cheese Salad

Ingredients

  • ¾ cup Marie’s® Creamy Avocado Poblano Dressing
  • 2 cups grilled steak, diced ½"
  • 1½ cups orzo pasta, cooked
  • ¾ cup black beans, canned and cleaned
  • ½ cup pear tomatoes, diced ½"
  • ½ cup roasted corn
  • ¼ cup red peppers, diced
  • ¼ cup carrots, julienne
  • 4 cups romaine lettuce, shredded
  • ¾ cup Cotija cheese, crumbled

Preparations

  1. Mix all ingredients together except romaine lettuce and ¼ cup of the Cotija cheese; combine well.
  2. Place romaine lettuce onto a serving dish and top with mixed ingredients. Garnish with remaining Cotija cheese.
