Italian Vinaigrette

Corn, Black Bean and Quinoa Salad

Yield: 4 servings

Ingredients

1 cup Marie’s® Italian Vinaigrette
2 cups dry quinoa
5 cups water
2 Tbsp. vegetable base
2 cups fresh corn, cooked
2 cups black beans, cooked
1 cup red pepper, diced
Salt and pepper (to taste)

Preparations

1. Place quinoa and water in a pot; mix in vegetable base. Bring to a boil and let simmer 15–20 minutes. Spread evenly on a sheet pan to cool.
2. In a serving bowl, mix quinoa with corn, beans and red pepper; combine well.
3. Season to taste with salt and pepper.
