Blueberry Pomegranate

Mother Earth Salad

Yield: 4 servings


10 oz. Marie’s® Blueberry Pomegranate Vinaigrette
2 cups beets, roasted and cut into 1-inch cubes
2 cups oranges, peeled and cut into half-slices
1 cup fresh blueberries
1/2 cup carrots, julienne
8 cups mesclun mix
1 cup feta cheese crumbles
1/4 cup roasted sunflower seeds


1. Preheat skillet on medium-high heat.
2. Cook burger patties to desired temperature.
3. While burgers are cooking, toast burger rolls.
4. Layer sliced tomatoes and arugula on toasted roll.
5. Place cooked burger on arugula and top with blue cheese dressing.
