Creamy Avocado Poblano Dressing

Grilled Prawns and Grains Salad

Yield: 4 servings

Ingredients

  • 1½ cups Marie’s® Creamy Avocado Poblano Dressing
  • 10 cups mixed greens
  • 2 each avocado, diced
  • ½ cup quinoa, cooked
  • ½ cup farro, cooked
  • ½ cup pear tomatoes, halved
  • ½ cup carrots, julienne
  • 20 each prawns, 16/20, grilled
  • ½ cup Cotija cheese, crumbled
  • ¼ cup cilantro leaves

Preparations

  1. Lightly toss all ingredients together except for the prawns, cheese and cilantro leaves.
  2. In a serving bowl, mound the salad with height, and arrange the shrimp on top.
  3. Garnish the salad with the Cotija cheese and cilantro leaves.
